This recipe is one of our family's favorites. When Cade was growning up, he spent a lot of time gathering cows up in Rich County. They would be gone all day looking for cows, so for breakfast they would feed them biscuits and gravy and it would hold em over till they stopped for a late lunch. As a fun childhood memory, this is comfort food to him. When we got married he always wanted me to cook biscuits and gravy but, honestly, I had never even tasted it before. I kinda learned how his mom did it and came up with my own version of the recipe. We eat it for dinner more than breakfast. It's good no matter what time of day it is, especially if you are counting carbs and not calories.
Gravy:
1 lb. maple or original jimmy dean sausage
4 Tbs. butter
4 Tbs. flour
3 c. milk
*brown the sausage in a large skillet. Don't drain your sausage (you want all the yummy drippings for flavor in your sauce.) add in butter and whisk till it's melted. whisk in the flour until bubbly. slowly pour in the milk and whisk until it boils or reaches desired thickness. Salt and pepper to taste.
Biscuits:
2 c. flour
4 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1/3 c. shortening
1 c. milk
*mix dry ingredients together. cut in shortening with a fork. add milk and stir with fork just until dough forms and dry ingredients are mixed. drop onto a greased cookie sheet. bake at 450 for 11 minutes. (makes a dozen small biscuits)
*you can also add in shredded cheddar cheese, bake, and brush with melted butter, garlic powder, salt and parsley for yummy biscuits like red lobster's to serve with another dish.
My sister taught me how to make biscuits and gravy. She used hamburger, but I found I liked sausage much better! Thanks for reminding me, I haven't made these for a long time! YUM!
